The Green Restaurant Association recently awarded Garbanzo Mediterranean Fresh 3 Star Certified Green Restaurant status. This honor is based on 40 criteria ranging from the amount of vegan and vegetarian dishes served to the efficiency of appliances to recycling practices.

Prior to opening, Garbanzo’s space went through a renovation, allowing for improvements to their sustainability practices through the installation of items such as digital menu boards, energy star appliances, and occupancy sensors, and the use of green materials like zero VOC paint. Items from the former restaurant were utilized where possible; 51 of 69 chairs and 13 of 14 tables were salvaged from the location’s previous restaurant. Behind the scenes, staff use paper products made from 30% post consumer waste and participate in the University’s recycling program. Guests use take out containers made of 90% post consumer recycled paper and enjoy a menu that boasts 22% vegetarian main dishes.

Congratulations, Garbanzo, on this important achievement!
